First Course for the Twins Birthday Dinner!
Note by Phyllis Brown: Saturday was Ritchey and Rickey’s 57th birthday! We always celebrate together – one year at their house, one year at our house – but rarely does our celebration fall on the day itself! Rickey and his wife Brenda were our guests this year. We started with a lovely Caprese Salad – one of the easiest – but most delicious – recipes! It is a dish that captures your attention with it’s vibrant colors – red, green and white for the Italian flag – but each bite explodes with delicious flavors into your mouth – begging you to take just one more!
- 3 large, very ripe tomatoes, sliced
- fresh mozzarella, sliced (about 1/2 pound)
- fresh basil leaves
- olive oil
- freshly ground black pepper
Layer the salad – a slice of tomato, a slice of mozzarella, a leaf of fresh basil, continuing to fill the plate. Drizzle a little olive oil over all and top with black pepper. Enjoy!
