Summer’s Bounty Cole Slaw

Note by Phyllis Brown:  If you do not grow your own vegetables a visit to your local farmer’s market can make it seem like you do!  This cabbage came from my sister’s garden last year.  The tomatoes and dill were from our garden.  The cucumbers, yellow pepper and red onion were from the Danville Farmer’s Market.  I have used a strawberry champagne vinegar in this slaw before and it is great!  Such a beautiful slaw – and tasty, too!

Summer’s Bounty Cole Slaw

  • 1 small or 1/4 large cabbage
  • 1/2 red onion
  • 1 large carrot
  • 1/2 yellow pepper
  • 1/2 cucumber, peeled, halved and sliced
  • black pepper
  • salt
  • fresh dill, snipped
  • 1 large or two medium tomatoes peeled and cut into eights
  • 2 tablespoons white vinegar
  • mayonnaise

Finely chop the cabbage, onion, carrot and pepper in your food processor.  Place in a large bowl. Add cucumber, fresh dill, salt and black pepper.

Add fresh tomatoes.

Add vinegar and enough mayonnaise for personal preference.  Taste and add more salt, pepper or dill if needed.  Enjoy!
