Cherry Muffins with Butter

It’s a dark and stormy morning in Kentucky.  What better way to start the day than with muffins hot from the oven?  I used dark, sweet cherries today – my favorite!  The muffins are just a touch crispy on the outside and soft and luscious on the inside.  Incredible smells are in every nook and corner of the house – rain cannot dampen this day!

Cherry Muffins and Coffee

fruit Muffins

  • 1 3/4 cup flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 well-beaten egg
  • 3/4 cup milk
  • 1/3 cup cooking oil
  • 1 cup fruit – dried or fresh (drain excess juice from fresh fruit)

Stir together thoroughly the first four ingredients and make a well in the center.  Combine egg, milk and oil; add all at once to dry ingredients.  Stir just till moistened.  Add fruit.  Stir in carefully.  Spray muffin pan with cooking spray.  Add mixture evenly to muffin pan.  Bake at 400 degrees for 20-25 minutes, until golden brown.  Makes 12 muffins.

  2. Okay. so where’s the chocolate cake recipe? I’ve known this woman for years….she’ll hold out the best for last until we’re ninety and can’t see to cook anything!

    • Marti, after looking at the original picture I realize that’s just a boxed mix made in a large cake pan – with no icing! Kate and JP were coming for supper that night and since that’s the way Kate likes it, that’s the way I made it! Sorry to disappoint! But, I do have a chocolate cake recipe you will really like! I promise!
