Lemon and Garlic Green Beans
This is a very easy, but delicious recipe from Everyday Italian. Sometimes the simple recipes are the most satisfying!
Brown a handful of pine nuts in a hot skillet. Remove to a small bowl. In the same skillet saute 3 or 4 cloves of garlic in a drizzle of olive oil for just a minute. Add 1 quart of canned green beans, drained, or a pound of fresh green beans. Canned green beans just need to heat through; cook fresh green beans until tender but crisp. Zest a lemon into strips. Add roasted pine nuts. Season with salt and pepper. Enjoy!

Mmmm….I’m like this one too and thinking it will be my green bean dish! I do like simple, quality fresh ingredients – that’s what makes a dish taste amazing. I will leave out the canned beans tho and go all fresh!!
I would have used fresh – just one of those drawbacks to living in a small town. It’s sometimes difficult finding good fresh green beans at this time of year!
This looks like something that you’d find in a trattoria in Rome somewhere. Fresh ingredients combined simply. It doesn’t get much better than this.

The pine nuts are great! We don’t have enough room to grow green beans – and many other things! Tomatoes, herbs, leeks and a pepper plant is the extent of our garden!
Yes, I had an au gratin recipe the other day, but with beans, simpler is always better. This looks fantastic.

I just love garlic, so with a green veg and some iron-rich pine nuts thrown in this is definitely a dish for me! AND it’s easy to prepare!
